The now famous Sevendials Mushroom Appetiser Soup

Ingredients Serves 8 - 10
- 8 large shallots - peeled and sliced
- 3 cloves garlic - sliced
- Generous sprig of fresh thyme
- 1 kg field mushrooms - chopped
- 1/2 bottle of white cooking wine
- butter and olive oil - seasoning - white truffle oil
- Cream
- 1/2 litre vegetable stock
Method
- Sweat shallots and garlic in a knob of butter with a little oil in a pan with the lid on until soft.
- Add mushrooms and thyme and sweat again covered by the lid.
- Remove lid and add 1/2 bottle white wine and reduce by half
- Add 1/2 litre of vegetable stock and bring to the boil. add a generous "glug" of cream and liquidize, then pass though a sieve.
- Season to taste and serve by reheating gently.
- Pour into bowls or cups and drizzle with white truffe oil and finely chopped chives.
- Also good with home made croutons.
