The now famous Sevendials Mushroom Appetiser Soup

Ingredients Serves 8 - 10

  • 8 large shallots - peeled and sliced
  • 3 cloves garlic - sliced
  • Generous sprig of fresh thyme
  • 1 kg field mushrooms - chopped
  • 1/2 bottle of white cooking wine
  • butter and olive oil - seasoning - white truffle oil
  • Cream
  • 1/2 litre vegetable stock

Method

  1. Sweat shallots and garlic in a knob of butter with a little oil in a pan with the lid on until soft.
  2. Add mushrooms and thyme and sweat again covered by the lid.
  3. Remove lid and add 1/2 bottle white wine and reduce by half
  4. Add 1/2 litre of vegetable stock and bring to the boil. add a generous "glug" of cream and liquidize, then pass though a sieve.
  5. Season to taste and serve by reheating gently.
  6. Pour into bowls or cups and drizzle with white truffe oil and finely chopped chives.
  7. Also good with home made croutons.
